Hi everyone....this post is for some of you (like Susan and Andy) who are struggling with the gluten free diet.
There are some really good gluten free products out there, and some really terrible ones. I know it's hard to figure out exactly how to go gluten free, but here's a great link that will be very helpful for those who have to avoid gluten....it's a primer for beginners:

There are so many things that are naturally gluten free: eggs, fish, poultry, meat, fresh veggies and fruits, nuts, corn products like tortillas and chips (but read labels!!), rice.....you don't need to go hungry!!
A simple meat and veggie stir-fry over rice is great, but avoid regular soy sauce because it contains wheat. You can buy a wheat-free, gluten-free soy sauce or use tamari sauce instead (a fancy version of soy sauce that's gluten free). You can have steak, baked potato, and salad (just be careful of condiments, toppings and dressings...read labels!). A Mexican meal made with corn tortillas like enchiladas or tacos can also be gluten free as long as the sauces and seasonings are gluten free.

anything gluten free if I want it badly enough! :)
