I had my takedown exactly 5 months ago today. I consider myself fortunate that it has been fairly smooth sailing for me since then. I did have pouchitis toward the end of the summer, but it was much easier to deal with than I had expected. As far as food, like run4pancakes said, if something bothers you at first, take a break from it and try it again later. Stick to the low residue diet as long as you are advised to, and only try one new food at a time. I don't remember when I first tried raw veggies, but I am at a point where I feel comfortable having a small salad maybe once a week or so, though I'm sure as time goes on I will be comfortable having them more often. Tomatoes are still a little bothersome for me so I really limit them for now. I honestly can't think of anything that I absolutely do not eat. I have yet to try coconut, popcorn and sushi. (Though I don't even like sushi so probably never will try it...)
