Sounds like you are doing well. Re: Splashing, I am short, so I stand to empty. My output is not very liquidy, so I aim at the inside front of the bowl right above the water line. I keep a water filled squeeze ketchup bottle on the back of the toilet and if the flush doesn't completely take care of it, I give it a hefty squirt from my bottle.
You are lucky to find a good stoma nurse. Most of what I learned was from here and my other ostomy board. I had home healthcare for a couple of weeks and those nurses did not seem to know much about ostomies. Much less with the nurses in the hospital. They did not have an ostomy nurse on duty on the weekend. On my second day {Sat} the surgeon on rounds ripped off my incision dressing, which also broke the seal on the pouch I had on when I woke after surgery. The floor nurse didn't seem to know much, so I was pretty much on my own with what I had learned while educating myself prior to surgery. I was thankful I knew a little bit about how to change an appliance.
I went to our local hospital's wound clinic just once after experincing leaks and the wound care nurse there was pretty helpful. She showed me how to "crust" using stoma powder and barrier wipes/spray, and then repeating 2 or 3 more times.
