I have a colostomy not an ileostomy, so my experience might not be relevant, but I started eating shrimp within a couple of weeks, delayed the others a few months because I live inland, but visited California two months after surgery and ate fish or shellfish (primarily shrimp, crab, oysters) every day. No problem. But I've had very little problem with food, other than fighting off the weight gain as my appetite has returned to normal and beyond. I think the best thing to do is try a small amount and see how it goes.

While I had my Leo, my wife (Singaporean of Chinese dissent) didn't want me eating crustaceans because she thought it would make my skin around the stoma even more sensitive. Other than that, I don't see a problem with anything you listed. It's all good, low fat protein. I'd toss in some scallops too, just for good eatin'.
