While I was in New Orleans, I was greatly disappointed to find out that the local Walmart did not carry a BATTER BOWL - a three part contraption - bottom bowl, sifter, and top bowl - like the one used lightly dry batter the CAJUN CATFISH FRY- as well as onion rings, mushrooms (much better than a wet batter)
I did find one online in Calgary so it is winging its way here to Peterborough. I will be using the bowl and baking the fish in the oven (350 F for 20 minutes for catfish fillets) instead of deep frying - or pan fry it using the Canadian Method - 10 minutes per 1 inch thickness -
Food is part of the celebration of life and I am grateful to Cajun Jeff and the others sharing their expertise and insights. And surprise - I even lost weight during my trip! ( 5 lbs... must have been all that exercise during the crawfish boil)
Here is the recipe I did for the GFMPH Breakfast Casserole - thought this might be an easier way to share with the guys who asked for it...

egg sausage breakfast casseroleNOTE: I doubled it up for the GFMPH and used a disposable alumunium foil casserole pan - so you may have to adjust what size of glass casserole dish you use to avoid any spill over -
-for 4 people -
ingredients- one llink of smoked sausage - andouille or another long smoke sausage - put in small pan and cook on medium high for a bit to rendered it/ reduce the fat - then paper towel dried and then sliced into coins - let cool-
- one bunch of asparagus - snapped and cut into 1/2 inch length segments
- 1/2 onion - peeled and coarsely chopped
- 1/2 teaspoon salt
- 1/2 tespoon ground black pepper
- 6 eggs (original recipe called for 4 - so you can adjust to your taste) - lightly beaten - break up the yolks
- 2 cups of milk
- 6 slices of bread - fresh or day-old - you can tear them up or cut into 1 inch squares - put on
cookie sheet and toast in oven at 350 F for 15 minutes - let cool -
- 16 oz of shredded cheese ( I like aged or the mozz-cheddar mix)
directions1- when bread and sausage are cool to the touch - in a medium bowl - mix together the eggs, asparagus, sausage, onion, milk, salt and pepper
2- put toasted bread pieces in bowl and mix thoroughly
3- add 8 ounces of the shredded cheese and mix thoroughly
4- pour mixture into greased 9 x 13 (may need bigger) casserole dish - level out the mixture lightly
5- scatter the remaining cheese on top of the mixture in the casserole dish
6- cover with aluminum foil and place in preheated oven - 350 F for 1 hour
7- after 1 hour - uncover and bake for another 30 minutes
8- let cool for a few minutes - cut casserole into six portions ( so you can go back for guilt-free seconds) and serve
