You never mentioned your psa or prostate size. Prostae size should be indicated on your biopsy. If your psa density is less than 1.5 (prostate size in cc X .1 divided into your psa) you are very low risk. You should also be aware that for low risk cancer, G6 with psa less than 10, any treatment will have no survival benefit to a 65 year old man.
You can safely wait a few months or even years monitoring your psa for further upward movements. A psa doubling time of greater than 3 years is very favorable for an AS strategy as is a psa density of less than 1.5.
