gene62, I'm not sure from your response whether you know golden beets are really a thing or not. They are!
Golden beets have virtually the same flavor. Golden are slightly sweeter and less "earthy." Both are super healthy, but since Golden beets have that yellow-orange color the health benefits are just
slightly different than red beets. Foods from this color spectrum contain high levels of vitamins and minerals such as: vitamin C, vitamin A, beta-carotene, potassium, lyc
opene, flavonoids, and zeaxanthin. Plus the Goldens won't stain your pee or poop, or your countertops, or the preparer's hands (apparently you'll need to ask you wife about
this).
Do you have a Season's 52 restaurant near you? This season (they change their menu items seasonally) they are featuring golden roasted beets, Laura Chenel (soft) goat cheese with toasted pistachios and micro basil. IT IS INCREDIBLE!
