I'm not sure why but he said Brachytherapy was unsuitable for me which may affect those treatment options (I don't know enough about it).

I haven't got around to researching Brachytherapy yet, sorry.

Thanks for all the help. It's genuinely given me a lot to think/ask about.

There are two separate things. You are not a good candidate for LDR brachy monotherapy for several reasons - your Gleason grade, the seminal vesicle involvement, and the likely lymph node involvement. That does not mean that you are not a good candidate for external beam radiation with a brachy boost to the prostate. HDR brachy boost may be especially a better choice for you because it can treat the seminal vesicles, whereas seeds cannot.

Your prostate size is not a problem. You may have other issues - previous TURP? History of urinary retention? - that may preclude its use.
