I have celiac disease, hypoglycemia and hyperthyroidism. Celiac disease is expanding, not because wheat ingestion is expanding, but because sugar ingestion is expanding.
Sugar is addictive. Wheat makes sugar addictive, and sugar ingestion gives wheat the ability to feed sugar addiction.
The mechanism which makes sugar addictive is the action of ingested opioids like gluten on pancreas nerves. The pancreas responds by flooding the blood with insulin.
Large proteins like gluten should not be in the bloodstream. DPPIV is supposed to break them apart in the small intestine. But gluten in the small intestine makes the body release zonulin. Zonulin arrests digestion, and dumps the intestine’s contents into the bloodstream.
Why does the small intestine normally release zonulin? .......to rinse sugar-propagated gut microorganisms out of the small intestine, and into the bloodstream. But microorganisms mutate to mimic gluten. So every time a susceptible person ingests sugar and wheat, it dumps gluten into the bloodstream, and causes a flood of insulin.
So far I have described a non-autoimmune reaction, caused simply by a gluten antigen attack. It causes hypoglycemia, type 2 diabetes, and metabolic syndrome. Autoimmune diseases are caused by the immune system reaction to this attack.
