My daughter also has celiac (along with crohn's) so she is 100% gluten free. I have to pack her a lunch everyday. Some easy things that she loves are gluten free crackers or chips (there are tons of different chips out there from tostitos to bean chips) and she will dip any of these in egg salad( I keep a few hard boiled in the fridge), tuna salad and chicken salad. I sometimes mix in some avacado. It's so easy to keep these in the house. This is kind of in place of bread
AND the fact that there are so many chips and crackers that are really yummy it makes for a big variety. She eats yogurt especially Chobani Champions, They're Greek yogurt and they look like they're packaged for kids, They really are good for greek yogurt. Baked potatoes (and sweet potatoe) I do them in the microwave.Frozen Sweet potatoe fries. I find it easy to make her homemade mac and cheese I use Velveta cheese and just melt it in the microwave over the pasta. It makes the pasta actually taste good. Van's frozen waffles and pancakes are pretty good. If I think of some more I'll post them. I hope this helps... Oh yeah she LOVES hummis! She will dip just about anything in Hummis, crackers chips veggies (if you can't eat raw just cook them a bit and maybe you can tolerate them)
