I really like noodles made from quinoa, a gluten-free grain. I find them at my local Whole Foods Market (they have a lot of GF pasta, but I like the quinoa noodles, they hold together really well, unlike the rice and corn noodles I've tried).
I was tested for Celiac, got a negative blood test, still waiting for results of upper GI endoscopy. I had all the classic symptoms as a kid, but then "grew out of it" and happily ate all the grains I wanted until a few months ago when I developed colitis. Now I'm wondering if I really had Celiac all along and just paved my way to other problems. Ugh.
