You have a point there Red!! It really is the most important meal of the day. And it is quite difficult to watch hubby and kids eat cake & cookies after dinner and not be able to have any. :( I have about 5-7 more pounds to go and then I will be able to indulge.
But here's a quick & easy apple crumble that my family likes:
3-5 apples - peeled and sliced thin (mix of cortland and granny smith is the best)
1 can whole berry cranberry sauce (ocean spray)
1 cup flour
1/2 cut oatmeal (not quick cooking)
3/4 stick margarine
brown sugar - to taste
granulated sugar - to taste
cinnamon
spray a 9" round pyrex with cooking spray. Layer sliced apples on bottom. Top with cranberry sauce.
Mix flour, oatmeal, margarine, cinnamon, and sugars to form a crumble. Should be pretty sweet. (I use more brown sugar than white). Put on top of fruit & bake 350 for 1 hour until crumble is crisp and bottom is bubbly.
Serve hot with vanilla ice cream!! YUM!
