I don't think there is an answer yet to the proper amount of spinach one needs to ingest for it to work because this is a new diet and everyone is different. It probably depends on how depleted your body is of the nutrients it provides. What I did that worked for me to achieve remission was eat a 13.5 ounce can of canned spinach every day or two and also ate other high magnesium foods daily, mostly sunflower seeds and peanuts and sometimes beans. Canned or cooked spinach translates into a lot of fresh spinach because when you cook it it shrinks a lot so I think it would take a lot of fresh spinach to do the trick. With this being a new diet all we can do to figure out how much of these foods to recommend is for all of us who this diet helps to share each others experiences with it and learn from each other. Also I have read that magnesium and calcium can counteract and deplete each other and I have noticed this with this diet, too much calcium will cause magnesium deficiency. If I ingest a lot of calcium foods(Pizza and cheese etc) it takes a lot more high magnesium foods to do the trick. You don't have to eliminate high calcium foods from your diet completely because I do have milk every morning on my breakfast and a little cheese sometimes and stay in remission but beware of eating lots of calcium foods often if trying this diet and trying to get magnesium levels up in your body.
