I have attached the diet for your wife. I guess you are asking a very complex question.
I have had UC for 15 years now. From when I was first diagnosed my diet has improved dramatically. I know I will never be 100% but I can settle for 95%.
The very first thing your wife should be doing is keeping a food diary. In the food diary, she should note every little thing she puts into her mouth, including medication, drinks, herbs, spices etc. Absoutely everything. She will start to notice a pattern happening if she does this. She will be able to identify foods that are upsetting her.
I guess it depends on how bad her condition is. If her condition is very bad, she may not even know where to start as she might be blaming all foods. (I have done this too). I cannot tolerate any form of gluten.
If this is the case, I recommend that she try to contact the dietician at the bottom of the attachment and make an appointment to have a consultation with her. At the time the consultation cost me about $80AU for an hours appointment. The best $80 I have ever spent for my health. Please read all my posts starting from the first post and you will find links to information that may help.
