Hi Gwynne,
As Suebear and Fruitgirl said, yes it'll take a lot of time and cooking and worse cleaning up! Our kitchen was a perpetual disaster site. If you do organic, it's also very pricey. You don't have to have a yogurt maker but it's a wise investment. You'll be enough of a pioneer mom anyway, use the help that modern appliances can give you! My husband works very flexible hours and I stay home and we were both cooking/cleaning it seemed like all of the time but the food was good. I don't know how people do it in an oven/hotplate/dehydrator by it can apparently be done. Get the book that Sue mentioned. It's essential. Then there's tons of web support if you want/need it. As a mom, I would do anything for my kid to be spared these meds and their side effects. If something as simple as a diet will work, then I am all for it. But I would avoid certain foods not listed in the intro if I were you and then build up slowly. If it were me with UC I might just go the med route, but I can't expose my child to that without trying everything else out there, within reason and the scd is a healthy diet. There's been a lot of talk about
the SCD on dragonpack recently. Some of those kids have been through horrific side effects with drugs, hair loss, osteomalitis, multiple hospitalizations and are now thriving on the SCD. I prefer to start with the least dangerous treatment and then move up from there. You'll have to go slow with introducing foods probably, and there may be ups and downs but you'll know if it's working relatively soon I think. Email me if you need any more info.
