Can you make muffins using almond flour and coconut oil?
I have been on my modified SCDiet for 3 months and weight has stabilized (after 2 months really). I was not underweight to begin and lost about
7 lbs and feel very healthy with much more energy.
My suggestion is eating more fat foods and adding virgin coconut oil wherever possible (cooking eggs, even a spoonful by itself with a dab of honey tastes great). I don't suggest adding pasta or those types of carbs. I eat steaks with marbleing (not lean in other words).
Avocado has good fat in it also and can be added to lots of things: salads, mashed as guacamole, added to smoothies.
How long for your bowel to heal? That is an individual thing. It seems to be a slow process but I see small improvements every week. I now use enemas only once a week or when needed. Keep using them as long as you think they are helping.

pauly
My husband drinks protein mixes because he is weight training but I stay away from them because they have a lot of ingredients that worry me how my gut will react. I try to eat only pure foods, nothing manufactured and stick to SCD guidelines.

The Specific Carbohydrate Diet has been discussed before so I won't take up bandwidth here. Just do a search here or on google to find out more. My modification is that I don't eat fruits, fruit juices, SCD homemade yogurt or other soft dairy, all of which do not agree with my gut but are allowed on the SCDiet. And yes I have had a great improvement in the last 3 months, much improved symptoms, much more energy, less D, no bleeding.
I tried this same diet over 5 years ago and had no improvement. This time it worked and I am thankful.
