STEP 1: Change Your Diet
My diet works for me. I'm basically on an anti-inflammatory, fructose-intolerant diet. It works for me. But I know that some of the foods I can eat, others can't and visa versa. There are many different reasons for having UC; therefore, there are many different solutions. In fact, if you are very prone to flaring, then diet will probably have little to no affect.

FOOD & DRINKS THAT HEAL
* Egg white: Take egg white from one egg (make sure there is no yolk) put it in a glass, and add an equal amount of honey.
* Squash or Zucchini: Stir fry green/yellow squash or zucchini and eat with white rice as much as you can. This is the ideal food for your condition, and you will begin to feel better almost immediately.
* Rice Dishes: Eat as many rice dishes as you like but avoid spices mentioned below.
* Honeydew Melon: Ideal fruit for ulcerative colitis.
* Apples: Eat an apple after meals.
I can't have honey. It's very high in fructose, and I'm fructose intolerant.
I'm not going to consume raw egg white. I think we all know why.
Squash and zucchini are rather high in fructose in comparison to other veggies. I will eat squash occasionally though. It doesn't seem to bother me in limited amounts. I'm not much of a fan for zucchini.
Yes. I eat a lot of rice. I add turmeric, which is anti-inflammatory.
I cannot eat honeydew melons. They are high in fructose.
Apples are not only high in fructose, but they are also high in sorbitol. I cannot eat apples.

* Fish: Fish is an excellent food, rich in nutrients, and it is easily digested. Eat grilled or lightly fried. If you eat it with white rice, that’s an excellent food.
* Water: Drink plenty of water.
Yes. I eat fish. I buy wild caught salmon. I cannot eat farmed fish due to the added antibiotics, which is the reason I get flares.

ELIMINATE THESE FOODS/DRINKS FROM YOUR DIET
* Egg yolk: Whereas egg white is very beneficial, avoid egg yolk, especially if not hard-boiled.
* Red pepper/ paprika/black pepper.
* Milk and yogurt
* Butter (margarine in small amounts is okay)
* Ice Cream
* Seeds
* Nuts (including peanuts) or dry fruit (including coconut).
* Peanut butter
* Strong coffee
* Chocolate
* Cakes and creamy pastries
* Lentils/Beans (green beans are OK)
* Heavily coarse bread/ whole wheat
* Raw onions, raw garlic and hot green pepper
* Celery
* Beets
* Smoked foods
* Popcorn

I'm not really sure about
peppers. I've read about
the benefits of some types of peppers, especially in regard to inflammation; however, some peppers are nightshades, which are pro-inflammatory.
Yep. Milk contain lactose and is pro-inflammatory.
Yep. I will have butter only in small amounts.
Yep. Ice cream contains lactose. It's pro-inflammatory.
Not for me. I eat a lot of sun flower seed butter and macadamia nut butter. They are anti-inflammatory. Many of us are find the spinach and sunflower seed to help get us and keep us in remission.
All nuts, except for peanuts (which are really a legume), are listed on the anti-inflammatory diet. I eat all nuts, except peanuts.
I cannot eat dried fruit due to being fructose intolerant.
Yep. Peanuts are excluded from the anti-inflammatory diet. I don't eat peanuts.
Yep. Caffeine is known to make colitis symptoms worse for many people.
Yep. Chocolate is a known diaretic. That's why it gives some people, like me, diarrhea.
Yep. Cakes and creamy pastries are sweets. High concentrations of sugar can increase diarrhea.
Yep. Lentils/beans can cause bloating and gas.
Not for me. Whole grains are beneficial to the colon, and I have no trouble digesting them.
Yep. Onions are high in fructose. Green peppers are nightshades. I don't eat raw garlic though, and garlic is anti-inflammatory.
Yep. Celery can cause gas.
Yep. Beets are high in sugar.
I think I read somewhere that smoked foods were pro-inflammatory.
I don't seem to have issues with eating corn and popcorn in moderation, but I know many others cannot.

FOOD & DRINKS THAT SHOULD NOT CAUSE ANY DISCOMFORT
1. Fish/Meat
2. All cooked vegetables (except those mentioned above).
3. Fruits (avoid bananas and mangoes if you have bloating. Do not eat oranges in an empty stomach)
4. Rice dishes
5. White bread/ plain crackers
6. Green tea/white tea/ decaffeinated black tea
7. Ice tea
8. Lemonade
9. Coke/Pepsi
Bananas give me great poo. They coat the lining of the intestines. I can have everything, except for mangoes, which are high in fructose, and any beverages with added sugar or sugar substitutes. That means no ice tea, lemonade, and coke/pepsi.
White tea is supposed to be even better than green tea.

1. Cheese/Pizza
2. Pasta
4. Bagels
5. Tacos
6. Corn chips
7. Potato chips (small quantity with other foods only)
Definitely, no junk food for me. They have some really bad additives that make symptoms worse.

STEP 2: Avoid Exertion
Exercise releases stress for me. The only exercise that made my symptoms worse was figure skating due to all the jumping, falling, and rapid spinning.

Antibiotics are the reason I flare. I only take antibiotics when I absolutely have to.
