I was released from the hospital about
3 weeks ago from a horrible flare. I've been on a low residue and no dairy diet for the last 3 weeks since then; this was given to me/instructed by a nutritionist; will be on it for another week and then I can slowly add fiber and dairy to my diet. But, not much since this diet is really working for me now. It is kind of boring but you can still eat pretty good. Here's some foods I've been eating:
Any low fiber cereal (1g or less fiber) with lactaid milk; it is lactose free; I've been using lactaid instead of milk for french toast, pancakes, and anything else that I'm allowed to eat that requires milk. I've also been using Promise instead of butter since Promise is also lactose free. They even have lactose free ice cream. I've been eating Kix, rice crispies, trix, captain crunch. Any cereal that is less than 1g fiber is ok.
Peanut Butter and Jelly sandwiches with the crusts cut off (I do that since the crusts may have a hard time passing through)
Fruit: sliced canteloupe, sliced apples (skinless), canned sliced peaches.
Veggies: Canned carrots, potatoes (peeled, skinless), a little lettuce, spinach. Can't have too many veggies since they are fiber but will add a little greens here and there in a week.
Meats: all well cooked and tender meats are ok. I've been a meat and potatoes guy the last few weeks. Always was but now more than ever. Fish once in a while. I did have bar-b-que chicken but I didn't use any spices. Made a homemade sauce with Brown sugar, ketchup, and a little mustard - very sweet, good, and not spicy so won't hurt me.
Other/Misc: Chicken noodle soup, beef noodle soup, RICE, pasta is ok (just watch what you put on it; I haven't eaten tomato or cheese sauce in a while); I made some pasta with Promise (butter substitute), a little garlic, salt, pepper, cooked sliced carrots, and a little spinach. Boring and I know, not as tasteful - but hey, it's something to eat. Bread is also ok. Caffeine free teas and coffee are ok.
Desserts/Sweets: Baked donuts have been my big dessert kick. I love em'; glazed, cinnamon, powered, and plain.
Salt, a little pepper, garlic, basil, oregano is ok - just don't go overboard.
Lastly, like you said NO fast foods, fried, greasy, spicey, dairy, too much fiber, and basically any junk food is out. **Also, for me anyway and I'd recommend for anyone with UC** ABSOLUTELY NO CAFFEINE OR ALCOHOL. They are like poison for me and I will not touch them period now or maybe even ever again. If I do, it will be very rare and very little. Just stay away from junk, spicey, dairy, and easy on the fiber and you should be ok. It is some work/effort but it's worth it. I'd rather eat like this than have horrible flare spasms and all of the other fun stuff that comes with UC. Good luck - wish me some too.
