Can I give you my opinion of yogourmet starter for UC probiotics? I think it sucks. I noticed a big difference in how I felt using yogourmet (worse) vs. VSL#3 as a starter (way better). I know yogourmet can be purchased in smaller quantities and VSL#3 is more expensive (although less expensive per packet).
Anyway, on to fage. Sure you can use it. The way you make sure all the lactose is gone when making your own is to let it sit in your warm place for 24 hours or longer. It doesn't matter whether the starter you use has lactose in it because it is such a small amount and will be consumed in the 24 hour period.
You will be able to tell if it has enough live cultures at the end of 24 hours. If it is firm before refrigerating (just a little wiggle) you are good. If it's runny then it didn't have many live probiotics.
In the beginning, before I switched to VSL#3 I
opened up some capsules of Lactobacillus acidophilus and used them as starter. Worked just fine. I only switched to VSL#3 because many people said it was better. Yes it was for me but others think Align or other less expensive probiotics work fine for them.
So to sum up: you can use fage, or another good quality yogurt like Stonyfield, or
open some pill form probiotics and sprinkle in, as many as you feel is right since you can't overdose.
