All I can say is that removing most carbohydrates has been enormously successful for me, only "specific" carbs are eaten. I am not a scientist but am an expert in my own UC
As I've said (many times) the entire SCD list of foods was not tolerated by my gut, they allow more starchy veggies than I can handle along with SCD yogurt, some juices and fruits. I am just beginning to eat pears again after gaining remission but the effort has been worth the return to health.
I hope you can find some improvement. Protein is your friend when times are bad. And I've been in that place.
