I've looked everywhere for it in the stores. Is it something I need to make?
you can google for the process.
it would be best if you can make it yourself. most of the dry curd cottage cheese from the stores still contains lactose.
i pay some local farmer to make it for me - the natural way - and i always tell him to make it very dry. anyway, i've discovered after about
1 year on the diet that it's better for me without it - at least until now - but my family loves it, so i'm still buying it for them.
it seems that not only the lactose is the problem, but the milk protein itself. for me at least.
the only diary i'm eating is swiss&cheddar cheese. they are more maturated (old) and the milk proteins are more easily digestible for me.
good luck.
