I too was dissatisfied with the results of the almond flour. Yummy, yes. But a bit different. Nut butters will give a much better result (and cheaper).
This is a recipe I developed after several trial and error. Great fluffy bread-like texture. I often make it with
blanched almond butter, but peanut butter is much less expensive. Peanut butter will give you a brown bread, and blanched almond butter will make a creamy-white bread.
This recipe is super quick and simple.
PEANUT BUTTER BREAD (or muffins)
1 cup of creamy peanut butter (No additives - just peanuts, or peanuts and salt)
4 whole eggs
1 egg white
1/3 cup of honey
1 teaspoon of baking soda
Prepare your bakeware: Line a 13"x9"
cookie sheet with parchment paper. Or put paper liners in a 12 muffin tin.
Preheat oven to 375 F
INSTRUCTIONS:
In a 2-qt mixing bowl, beat the 4 eggs until foamy. Add half of the peanut butter and honey, and mix well. Then add the rest of the peanut butter and honey plus the baking soda, and mix well.
Beat the one egg white to soft peaks, and fold it into the peanut butter batter.
Pour the batter into the baking sheet.
Bake at 375 F for 15 minutes. Then turn oven off, but leave it in the oven for another 20~25 minutes. (The "bread" will continue cooking at a slowly decreasing temperature).

I think this recipe can be made with any nut butter, but I've only done it with peanut butter and blanched almond butter. Cashew butter would also work very nicely. Also, you may use a little more or a little less honey, depending on how you'll use the bread. For example, I use only 1/4 cup of honey and blanched almond butter to make bread for sandwiches and hamburger buns.
You can get creative and add things, such as raisings, blueberries, etc., but the recipe above is the simple basic mix.
