Nut Butter Bread
1 cup nut butter (I use almond butter but the original recipe was for peanut butter)
4 whole eggs
1 egg white
1/3 cup honey (adjust as you prefer-sweeter or totally unsweet)
1 teaspoon baking soda
Preheat oven to 375 degrees
Spray-oil a loaf pan (5x9 size about
4" high) I use glass but metal would be OK too
(original recipe used a 13x9
cookie sheet but I wanted a "loaf" of nut bread so I use a bread pan
Mix:
Beat 4 eggs until creamy
Add half the nut butter and honey, mix well
Add the rest of the nut butter and honey and baking soda, mix well
Beat the egg white to soft peaks (use clean bowl-I use a electric whisk)
Fold the whipped egg white into the nut batter
Pour the batter into the loaf pan
Bake for 15 minutes at 375.
Then turn off oven but leave the pan in the oven for 20-25 more minutesI leave mine in until it's completely cooled then it pops out of the pan easily.
That's all there is to it.
For those of you who can eat more things you could add walnuts or raisins, etc
I slice the loaf up and put some in baggies for the freezer and it's fresh all week that way.
You wouldn't think that the batter would rise up and be as light as it turns out but baking soda does wonderful things.
Also, do not despair if your egg white doesn't whip up perfectly. My last loaf I did not use a clean whisk and the egg white didn't get "meringuey" and the loaf turned out just the same as always, lovely. It looks almost like a chocolate cake but has a light texture and taste.

P.S. You could add a flavoring too such as vanilla or almond or orange. Endless possibilities.
