kmoore, of course your diet preference is your decision, but please just hear what I have to say.
A gluten free diet is actually not about eating gluten free products. Most of that stuff is just as unhealthy or worse than eating gluten. Real gluten free food is actually just unprocessed food...meat, vegetables, fruit, dairy, a few grains like rice and quinoa, and fats.
In my opinion and I think many others here agree, gluten is irritating and inflammatory, removing it can be very helpful. If you eat gluten free products, I wouldn't think you would feel better or improve your symptoms.
The mindset and learning curve take a bit of time, but if you implement it AND you do in fact feel better, it's not that hard or expensive. Shopping and food prep end up becoming much easier.
If you care to give it a try, you can probably get a lot of ideas for substitutes from people here who eat gluten free.
