Well, sorting out ulcerative colitis was really easy....
... just kidding, it was one of the most arduous things I could've ever imagined and it took 7 years of persistant learning/failing but once I got there it all made sense.
I have to keep this short because I have to go pick my son up from nursery soon, I will try to add to it later.
It started with the SCD diet - I always failed to stick with it and ended up trying different routes, but everytime I flared badly I always went back to it to put me back into remission (even though it took a few days sometimes and there was still symptoms). After a few years I gave the SCD/GAPS diet a really big push and ended up flaring again after about 3 months, this put me off (but it shouldn't have).
Years later, I revisited the SCD diet as all of the "other" diets had similar effective elements and mimicked the SCD. I figured that there was something wrong with the SCD diet and ended up removing honey and almond flour (really big components of the diet) and found I wasn't getting enough calories (I still like to gain muscle, have about 7% body fat, so I need it). Back then, I was SCARED of saturated fat, thinking it was gonna block my arteries and cause serious problems, that was the biggest mistake of my life, should've never listened to that trash - it's refined oils etc that cause problems.
There was also a problem with the perfect grass-fed butter that I had added in huge amounts, the casein and lactose was still causing a big issue. So I learnt to turn it into Ghee, using the lazy method (oven)... then, it was a perfect high calorie food, giving me copious amounts of CLA and other healthy factors (started to look even leaner than before, veiny and muscular, was pretty pleased). Then, I learnt lots of other tricks which allowed my gut to heal and benefited other aspects of my health, mainly Intermittent Fasting.
I am not trying to push my ideals at you, I am just outlining what I did - I don't own a website or book lol.
I only ate between 12-8pm and it was Paleo foods. I must first say that I am a VERY motivated person and I don't care about recipes, or things that taste nice. To me, Food is fuel, and with UC, you can't be picky, you have to heal and unfortuanely you need to squash all cravings. I started off LOVING ghee, and now I hate it, it makes me feel sick - but I continue with it because it has give me my health and weight. I broke my fast with Matcha green tea with lots of ghee in it, then had another one at about 3pm, for the evening I had lots of steamed green vegetables with either grass fed beef or salmon etc. Pastured eggs and avocados fill any "hunger gaps".
I will go into further later hopefully, if you have any questions I will help. I believe all sugars are bad for UC, low carb is the way forward, no starches or fructose. The only time you should have fructose is in berry-form, and preferably after exercise when the glycogen stores are emptied. I only eat carbs at night if I have to break it due to cravings and it is normally in the form of sweet potatoes or a banana.
EDIT: The reason why I cut out the honey is because I believe in only using carbohydrates when you really need to, and mainly after exercise (NEVER in the morning because of insulin and potential to feed pathogens)... also, the almond flour is hard on the gut even though it don't feed pathogens, it is also high in omega 6 (which should be avoided as much as possible because of the inflammatory properties of it).
