So Im not cray about
my GI. He has become dismissive, never returns my calls, and sticks to his "diet has nothing to do with it, take remicade or prednisone" attitude. He says "look diet may help, but there is no evidence, you pay me for the hard science.."
Im more and more convinced that diet, stress, and gut flora are MAJOR factors here, and that they all influence each other.
What recent papers can I bring to present to him that will help me get say, a script
for butyrate enemas (the result of fermentation and beneficial bacteria in the gut), or convince him I need help with FMT, or to attack this from a bacterial perspective, or just a generally more enlightened POV?

You may be preaching to the choir....depends on what you're wanting to convince him of ultimately.
Use your time wisely there, don't beat on the same subjects that he'll reject or you'll waste the time getting what you may need.
You can beg him for the FT and the butyrate enemas if you present that you're hoping he can at least have you delete them from your list if they don't help.
I will tell you that even if diet, stress or gut flora are the major culprits...only you can make the changes to help. You're not, however, going to make the UC go away forever.
There are meds, methods, etc to help with the stress. There are probiotics to help with the gut flora, as well as the food intake, etc. From what I've read, not all of our gut floras are alike...so there's really not one-fits-all to satisfy.
If you're sensitive to certain foods and you don't feel good after eating them, in truth...you should just stay away from them. I do....but I don't believe food is related to my flares or I'd be flaring all the time and not improving when I don't remove them when I am flaring.
You're not going to get a definitive answer or be completely satisfied with your doctor.
my GI is amazing for me...but I'm not searching for answers beyond what he can offer. (as an example) He won't do for someone such as you who's needing to have answers that fit into what you believe is what you need to confirm.
I'm in no way dissing your situation, so please don't read that into my response. I can relate to facts of being super sensitive to a lot of stuff because my body is made that way. Distress for sure makes it worse as well as situations, my reactions and the environment. I hate it, and it's a lot of effort to just function...

He sounds invalidating. Stress can make this condition worse. Have you considered getting a new GI doctor?

New doctor, all the way. He's being unprofessional.
From what I know, diet and stress can worsen symptoms, but often do not cause flare-ups or lengthen them. However, there are a lot of ways to talk to patients and work with them to find a treatment plan that works. And you are always allowed to REFUSE a treatment.
I've switched doctors a few times, usually because I had doctors who just did not listen to me, dismissed every concern I had, and insisted on treatments I didn't like. I was able to easily find better doctors (even in the same practices sometimes), and get the treatment I needed.
My current doctor will not prescribe prednisone because he knows I don't want to take it, and he didn't even protest or try to convince me to take it. He also always returns my calls on the same day that I've left a message. I am able to see him once a month without having to wait forever for an appointment, and without having appointments reschedule constantly.
I do agree with your doctor that to get you out of a flare, you will probably need something Rx. But I also agree that he sounds like a total jerk, and he's incredibly unprofessional! Get a new one!

The hard science is that there is no known cause for UC and no known cure, including prednisone and remicade. They are short term solutions with side effects at best. The only questions left are what is the definition of short term and what side effects will the patient have?

You are only going to end up arguing with the guy if you feel one way about
your treatment and he feels another. Get a new GI doc that is more willing to listen to you and work with you. Otherwise this will get you nowhere fast. I have been there and wasted a lot of time.
