You post good things about the surgery but also have difficulty with iron, is that from the surgery? Do you have any regrets about having the surgery? Or has it gotten your life back. I am asking because I am personally scared of the meds (and have tried anything I can think of to avoid them) but I have run out of options; and sometimes, I think that it would be better having the surgery rather than destroying your body on the meds.
Having the surgery I presume that you go more than 1-2 times a day, and you still have to judge what you eat, also I am not sure how your body controls it, does it feel the same as when you had your rectum?

My only regret is not having the surgery sooner but like everyone else I was scared and I wanted to try everything first.
I go to the bathroom 4 to 6x a day on average. There is no urgency. Just a feeling of being full. Just like you know your bladder is full. You just go. It's kind of hard to explain. It's not like the feeling with a colon and rectum. It's actually much quicker this way! I usually empty when I have to go pee anyway so I'm really not making any extra trips to the bathroom.
I can eat what ever I want. There are no wrong foods for me to eat. Some foods (like chocolate) may make me go more but I still eat them. After all those years dealing with UC, I don't care....I am eating! I try to eat healthy and I do work out every day.
My anemia issues are improving. In fact I just saw my hematologist yesterday. My hemoglobin and ferritin are up again. It's been three years since my first surgery and being depleted from UC all those years, it has finally taken me this long to catch up. I had to have some iron infusions to get me over that hump but now that my body is healed I am holding my own. It's been a long road.
Best of luck to you with your decisions...I know it's tough. But I would recommend surgery for anyone who has failed all the meds and has that low quality of life. It definitely has given me my life back.
