Josh, it's tough. But once you find the list of things that are ok in a flare, then you're set to go.
When I was flaring, I found the best thing was whey protein shakes (with almond milk), and lots of protein - all Paleo - all grassfed beef, lamb, fish.
For quick meals I would have: sardines with olive oil (from the can), and COSTCO's sells a large jar of herring in vinegar - I would take out some for that meal, put it in a bowl and rinse the vinegar off it, let it soak for a few minutes in purified water, and then eat.
BTW, for many folks peanut butter is very hard to digest.
It's also a part of the legume family, which makes it highly inflammatory ( per the Paleo rules).
