In my opinion the easiest way to get your proper food and nutrition in is mind over matter. Not that I'm saying eat whatever and be stupid with it, but there are ways to pack the good down:
1) if you can tolerate mass gainers and lactose these are your best friend, stick to ones that don't have added creatine to avoid bloat and gas tho, and if you can't have lactose get a protein powder with lactose digestion added or an isolate, which other then egg albumin protein and beef protein or the recently introduced paleo protein are about your est options.
2) make your meals all at once. Stock up. And have them prepared easy. With practice you'll be able to make a weeks worth of food in an hour and that is much easier.
3) if you are having trouble just getting the food down mash it up. It's gross, but throwing a chicken breast and a sweet potato in a food grinder or blender then adding some chicken broth sure makes it a lot easier to eat.
Hope this helps, I use these tricks to get my meals in which is roughly 7-8 a day and macros at about 650 carbs and 400 grams protein. You can do anything if you really want to.
