I know with my IBS, it's a cumulative diet. I can eat a big salad once in a while, but if I eat the salad with a cheesy pasta dish, I'll get colicky cramps the next day. If I'm eating pizza this week, I don't eat beans or salad, etc. I've sort of learned that I can eat "problem" foods (high fiber, fattier) two or three times a week at most and it won't bother me.
On the positive side, I recently had a minor surgical procedure. I know anesthesia always makes me constipated, so I had a big Cobb salad the night before surgery. Voila! No constipation. So while it's a pain in the rear, I can also use it to my advantage at times.
