while I assume he took the biopsies form areas where he saw mild inflammation, it is possible other biopsies might have told a different story. this could also mean you colitis is infectious and not UC, or that there is even a food allergy in play (that is not secondary to colitis).
Bottom line, you colon has the inflamed appearance of mild colitis, and it is not possible to make a diagnosis of UC at this time. This is good news / bad news. There is inflammation in your colon, but it is not well understood.
I would go heavy on anti-inflammatroy foods and try to manage inflammation and symptoms until you get further diagnostic work.
