My goodness, I cannot stand the taste of kombucha. I haven't fermented my own just yet but store bought is ACIDIC and extremely fizzy. The first time I had it, I spit out the liquid and threw it out because I thought it was expired. (Although, there was some kombucha stuck to the bottom of the bottle that wouldn't come off if rotated.. so maybe that's why?)

I agree that Kombucha is DISGUSTING.
I have tasted some amazingly disgusting things in my life... but I can NOT trick myself into even tolerating Kombucha.
Kefir on the other hand... is slightly sour tasting. Store bought is very sugary too. So you get used to it pretty quick/easy. At home Kefir... which I hope to start making this weekend... is probably going to be a lot more sour and harder to get used to.
But dear god... nothing is like Kombucha. Icky.

I haven't tried kombucha. I don't even know what it is. I.have been drinking the kefir for a week now. To me it's like drinking a thin yogurt, which I really like.

*wipes sweat off brow* I'm glad I'm not the only who feels this way! It's also good to know that it's supposed to taste nasty as maybe I can down the drink in a couple of gulps, lol. I need some sort of probiotics as pills are a no go for me.
I haven't tried store bought Kefir but, I may have to just to know what it might taste like. I was also looking into getting the Kefir grains to make my own batch but I would have to wait till it gets a bit warmer, as the house is too cold for it.
dybeye, that doesn't sound too bad! Does it resemble sour .. raw milk? I'm not sure if it's raw milk that my family drunk in the past but it's almost like a yogurt milk, haha. (I'm Polish)

Yes it does. When I had my mom taste it that's the first thing she said. It reminded her of the raw milk they used to drink. :)

Aha! Then that isn't too bad in my book. When I was younger, I used to dislike that taste but not so much now. :)

From Wikipedia: http://en.wikipedia.org/wiki/Kombucha
"Drinking kombucha has been linked to serious side effects and deaths, and improper preparation can lead to contamination."

The Kefir I make and have bought is milder than yogurt and much milder than the skim milk scd type yogurt I make.
I started kefir then switched over to it 2 weeks ago. Boy did I get gas and rumbling from that. It has finally stopped. I was ready to switch back. Mutaflor and VSL both caused a little gas for a few days but I was starting to think I was flaring. Kefir is much better on cereal. I do not find kefir that easy to make. You have to play around a lot with the amount of milk to grains and length of time. It does get sour if the curds separate and it is not allowed to vent. The plain Trader Joes brand is very similar how mine tastes when I get it right. Viili(Finnish) yogurt is really mild and half way between dannon and kefir in consistancy with the added feature of stringing like snot. I am trying that next.

There is a fermented Chinese tea that is pressed into blocks and can be stored for years. I forget the name but it tastes like dirty sweat socks brewed in water. I have had a block of it in the cupboard for 15 years.

kombucha and kefir taste completely different. to me, kombucha tastes like hard apple cider but that's before i flavor it with different fruits.
kefir tastes like sour milk.

I'm thinking about
making Kefir with filtered water rather than milk, which I assume the yogurt texture comes from?
I also know the risks with Kombucha. (;

I have been successful in getting a thick yogurt with skim milk. Kefir not so much. Seems to need fat and milk protein or it is pretty watery. Never had water kefir but I would think the yeast would predominate and don't see how anything could get thick without protein. The recipes for water kefir are very similar to bathtub booze. Homemade beer might be just as good for you and taste better.

a friend of mine was witness to his young son telling his mom that the soup she served for dinner one night, tasted like "monkey piss" !
maybe she used kombucha as the base

My homemade Kombucha tastes delicious to me but then again I find liver very tasty as well. Just about
every bottle I make ends up with a small baby at the top and the stuff you noted at the bottom. To me it smells somewhat of yeast and tastes somewhat like apple cider vinegar.
When I was making kefir it was very tasty to me but I no longer have access to raw milk so I no longer make it. That stuff was heavenly. Thick. Delicious. Yum. To me it had a taste similar to homemade yogurt but different.

I like kombucha. I love fizz and I don't like stuff that is too sweet. I haven't tried water kefir, the only kefir i've tried is the yogurt type which I don't love. It's ok but difficult for me to put back that much of a thick drink, it feels very heavy. Kombucha is definitely an acquired taste, but now that I like it, I can't get enough because it's low calorie, it's got a lightly sweet fruity taste, fizz and it's probiotic. I'd gladly take a kombucha over yogurt any day :) but yes, I've had some bad kombucha teas. You have to figure out what you like and brew it. I've also had some nasty yogurt loaded with sugar. There is bad and good of everything.
btw, kombucha often has the cultures on the bottom. it's not a problem and it's not expired or bad for you in any way.

Lol embers, I think I would have to agree with you.
Tap, prior to going vegetarian/vegan, I used to love liver and all sorts of organ meats. But store bought Kombucha is just.. YUCK! Maybe homemade is better than the processed versions.. hm hm..
notsosicklygirl and others who drink it, if you haven't said that you make your own, what brand do you buy? i need to find a new one. i really want to enjoy the drink because of the hype of it. it might or might not be real so it's worth a shot for probiotics.

I drink GT's a lot but I do make my own. it's expensive to buy.

the cranberry and guava are very fruity. Some are more than others. I have started to actually enjoy the less fruity ones but it took a while before i was able to drink those. I really like gingerberry and multigreen. I hate when I get a bottle that's not fizzy though and it happens a lot. for the price, they should have fizz.
