I love to cook so I'm sure I spend a lot more time doing it every day than your average person. That said, there are always things to do for quick fixes.
I'm with TMP in that on weeknights, we always try to cook enough so my husband and I can have lunch the next day.
I can eat oatmeal, so I'll bake enough for five days or so. This is the base recipe; I tend to play with ingredients a lot:

I started juicing recently, so that's a quick and easy meal. Only sucky part is cleanup.
I make a lot of soups, especially in the fall and winter. Then I freeze them in individual serving bags and just need to defrost/reheat when I'm hungry. Butternut squash is probably my favorite.
I love pesto and could put it on anything (pasta, meats, etc). So I usually make a big batch at a time. It keeps in the fridge for awhile, especially if you put a thin layer of oil on top, but you can also freeze it in ice cube trays, then put it in a bag in your freezer and you have individual servings.
I personally hate crock pots, but that's just me. They really are a great time saver.
Keep food items that can be quickly prepared on hand for lazy days. Some of my go-to's are tuna fish, frozen edamame, chick peas, apples (which I peel and eat with PB), nuts if you can eat them (I love almonds)... The meal I make most often when I don't know what to eat is pasta with a veggie ragu--usually zucchini, squash, tomatoes all cooked down, with pesto or balsamic.
