Obviously in a large flare you wont will most likely not gain weight unless you go on pred but hey this might sound a bit nasty and I guess you should see how your system handles it first but gulping down say a tablespoon or two of healthy fats in either olive oil or coconut oil will up your calorie count and if it's olive oil it's anti inflammatory and may help with the colitis as well as.
I think the magic number is between 2,843 and 3,752 calories extra over the course of a week to gain 1 pound per week, 1 tps of olive oil is around 120 calories, x2, 7 days per week is nearly 1700 calories so it wouldnt take too much extra to start adding that weight on after that. There's many other places to get decently healthy calories in through fats such as adding extra butter to your toast, waffles, mashed potatoes, etc..any bit of fat helps with the calories
When I was bulking up during my workout phase I would just literally gulp 1 or 2 tbs down of olive oil with whatever drink of choice and after awhile it didnt even phase me. There's growing research that healthy fats such as in the Mediterranean diet are actually good for the heart and body in general and not this evil we are told all over the news!
