Yeah I already know I have IBS, I'm currently seen a dietitian. I near enough know what my main triggers are (fructose, lactose, high fiber/high fatty foods, spice, onions and garlic). I'm trying out a FODMAP diet. Not going too well..even with supplements I've been prescribed with (Forti juice).

Multiple BM's might be caused by IBS rather than UC. If that is the case then RX meds will generally not be much help. I have both UC and IBS and got to remission through diet modification.
Since your other UC symptoms are under control you might consider removing foods that may be causing the BM's. Those of us who have had success with diet mod. all have slightly different trigger foods so you'll have to figure out what yours might be. After reaching remission I've been able to add some of these foods back in, others are still out.
You can read up on IBS, there are lots of current books in the library, to get an idea about it.
Doctors have different opinions too. I achieved remission with little guidance from my medical professionals about diet. When I told my current GI that I knew my multiple BM's were mainly due to certain foods he said he thinks it is still UC running the show not IBS. However very few GI's believe UC symptoms are caused by food. Catch-22. All I know personally is that high fiber foods, fructose, wheat, seafood, along with other random foods cause gut reactions for me.
You cannot gain weight as long as your food is not being retained long enough for nourishment.
