Do you have a follow-up with your gastroenterologist once the biopsies come back? These are good questions for him/her. My understanding is as follows:
Scaring can happen over time, due to repeat uc cycles of inflammation and healing. It is permanent. If you have only a small amount of it then no worries at all. In more extreme cases, like in crohn's disease (which you don't have), scaring can lead to narrowing of the intestine and necessitate a resection surgery to remove it (uncommon in your uc). Extreme scaring can also lead to muscle motility issues (that is, difficulty of your intestinal muscles moving stool along).
A Schatzki ring is a narrowing of the lower esophagus where it meets the stomach. These rings are common. Yours doesn't obstruct food, a good thing. Although, they can narrow more over time, and if it gets to small (less than a centimeter) it might prevent large chunks of food from entering the stomach. As long as you are chewing your food well, it shouldn't be a problem (no swallowing whole chunks off of a kabob without chewing).
Most nodules are benign (that is, not cancerous). If your doctor is worried about it, he'd have gone back for it again right away (after adjusting your sedation), or scheduled another upper endoscope right away.
Do you have GERD? I was reading that both the ring and nodules are more common with patients who have it...
