The strain she suggests are exactly as mentioned in the above: L. bulgaricus, S. thermopiles & L. acidophilus
You can't make any yogurt without the first two. And the last was always recommended by Elaine (BTVC author) because in her words 'acidophilus' keeps the gut neighbourhood friendly.
However various Bifidobacterium common to many probiotic commercial yogurts, in her opinion back then 'swing both ways' - in other words she suggests that in a damaged and inflamed gut bifo bacteria can take on characteristics that cause harm. She has some old papers on this.
Of Note: My gut does not like acidophilus at all however. Everyone is different in this regard. Start slow or try using balkan yogurt as I suggested. It's the most 'Gut' friendly starter available.
Bazillions of SCD'rs use starters (especially yogourmet) because many commercial yogurts do not list their strains. They just say 'bacterial cultures' on the ingredient label. You have to call the manufacturer which is a pain in the @ss. Some do list though but it can take some time to sort through them all.
I called and received an email confirming the Astro Yogurt. So did jody (mentioned below). She put me onto it.
