Mark,
I have the same improvement in my uc symptoms and arthritis whenever I have a cold or other virus. I wondered the same thing--whether some version of immune boosting could help. I am increasingly of the view that managing dysbiosis (regardless of whether it is a cause or effect of IBD) helps in symptom management. This study seems to lead in the same direction.
Did a bit of googling and found this as well:

Eugenol (found in Clove oil, oregano, turmeric, cinnamon and basil) increases some clostridia and mucosal thickness in mice. Might explain the benefits of Woo and curcumin. Looks like eugenol in purer forms has some liver toxicity and risk of other adverse reactions, but I might start adding ground cloves to my breakfast and see if it helps.
