Prolamins function as storage proteins in plants and are the major source of important proteins for seed germination. In fact, prolamins account for approximately half the total protein in all grains. There are many different prolamins, all characterized by their high content of the amino acid proline. Examples of prolamins are gliadin in wheat (when you break apart the quaternary structure of gluten, you mainly get gliadin proteins and glutenin proteins; see here), hordein in barley, secalin in rye, zein in corn, kafirin in sorghum,orzenin in rice , and avenin in oats.

I do fine with white rice though, it is the only major carb source I can eat. I eat it with every meal.

Well, I see that only 5% of the rice proteins are orzenin. That's good. Although this is not an ATI, I thought it may be important.
