If you feel diet mod. doesn't work for you why ask for opinions? It's your gut who'll be digesting it, what does your gut think? My gut would prefer hash browns (loves potatoes) whereas biscuits sit like concrete because gluten in general is not liked.
I don't eat much breakfast generally, just a piece of GF white toast and coffee and green tea. When in college (eons ago) didn't eat much then either, probably cereal or oatmeal but that was pre-UC and I could eat EVERYTHING. Sorry you have this disease at your age. If I had UC at college age I'd have the sausage minus the biscuit, protein is very tolerated, has minerals and vitamins and easily digested. There are some great chicken sausages available in groceries (so you don't eat too much red meat). Do you cook at all or just microwave?
