It sounds like you had a a pretty severe flare and you are still not in remission so unfortunately intense fatigue comes with the illness, particularly when flaring. It's one of the most annoying aspects of UC.
It does get better once you are in remission and your body is recovering.
In the meantime, you will have to pace yourself (sometimes a 5-10 minute walk is all one can do), take naps/frequent breaks, have a lighter schedule and work on the blood work/diet issues that quincy was suggesting. During flares, I do have to lie down during the day for at least 30 minutes even though I maintain full time work.
