Inflammatory foods are very bad for UC, most if not all the pork people consume is processed now a days. If there was any sort of link to pork itself, we would see it in the countries that consume it often, such as Asia. Vietnam, China etc the consumption of pork is a lot higher and they still don't suffer UC like we do in the west. That being said pork in my opinion is one of the meats you have to be very safe in handling and cooking due to the very real parasite risk and any internal parasites would not be good with someone with UC I could imagine.
