I haven't been visiting this forum for a while and just saw your post.
Since you have been diagnosed recently and you are having problem in finding the food that affects your IBD the least, I felt I had to tell you about my own expereince.
I have UC since 2002. about 18 months ago I found about the SCD (Specific Carbohydrate Diet), bought the book Breaking the Vicious Cycle, found it to make a lot of sense to me and decided to jump 100% into this diet (in fact the only way it may work) and about 6 months later I was better than ever and today I still am 100% comitted to the diet and strongly believing the diet has done more for me than any of the meds (that I still take, although in very small doses).
I don't know whether you have already heard about the SCD but if you have not and are interested I suggest you google SCD, or Breaking the Vicious Cycle and learn about it.
I know, if I was to eat now, rice, bread, potatoes, corn, I would flare immediately.
