It's trial & error, :) -- because we UCers vary in our reactions to roughage. Apart from bananas/avocados which sit just fine most anytime, I can usually eat some common raw fruits in moderation w/o problems, like apples, pears, peaches in season, melon, & blueberries-- but found that most citrus, plums, & strawberries, raspberries & other seeded items do not agree. Same for raw veggies except for "spring mix"-type baby greens & small amounts of chopped celery. I'm o.k. with beans, too, if I eat them with lightly seasoned rice or pasta. You may have a higher tolerance for raw produce & can determine over time what specifically sets off your bloating/gas attacks thru systematic analysis like the food diary.
It's not a pat situation-- we do have individual differences. Some members here post that bananas give them gas! It sounds like you're perfectly capable of a rational approach to resolving the problem & can overcome it w/o too many adjustments. / Old Hat
