My favorite thing is to skin a whole chicken and put it into the crockpot with just a little salt, maybe some seasonings (more or less depending on mood or flare). Low for 8 hours or high for 4. I cook rice separately..... the chicken will literally fall apart, it's so moist and tender. After I get the chicken out of the crockpot I skim the juices of fat (or pour into something else and let the fat rise....) and either just use the juices on the rice or thicken into a gravy.
I imagine something similar could be done with chicken pieces. And I would think some veggies, carrots, onions, etc could be added.... I just usually don't.
