I also think the diet listed is a good one. It is extremely close to what I have found works for me, but yes it would be a challenge (but not impossible) for a vegetarian.
For protein I eat meat, fish and nuts of all kinds.
For veggies I eat non-starch types and have eliminated cruciferous ones due to sulfur.
I use honey to sweeten when wanted and coconut cream in place of milk in green tea, it's yummy.
For desserts I make baked goods using nut flour (almond or pecan) mixed with shredded carrots or squash. Also really yummy.
My latest dessert experiment is trying to make halva, mid-Eastern dessert of tahini (ground sesame seeds) and honey. Mine didn't set up right but it's still good to eat, just want that firm texture of real halva. Next time

Chicharones (pork rinds) are legal but so rich I can't eat more than a couple. A bag lasts 2 weeks.
I cannot eat fruit except very ripe cooked plantain slices (with honey).
I am a well fed person, not underweight (I think I'm perfect lol).
My spouse non-UC eats the same as me and is darn happy with what I cook. He does however have a stash of chocolate that I break into every now and then when I feel like taking a risk. No harm every now and then.
Oh I also gave up eggs 2 weeks ago after reading about
sufur/sulfite and think it's better without them.
