Eggs and chicken should be fine. I'm surprised the cauliflower and broccoli aren't causing gas and therefore discomfort though. I would add a nutrient supplement. Boost and slim fast are examples. If you're looking for more natural foods, Naked makes a great line of protein smoothies that are high calorie.
Yogurt is another food I would encourage you to add.
Other foods you may consider trying:
Avocados (great source of healthy fats)
Fishes/Shrimp (full of omega 3s but watch the mercury intake)
Sweet Potatoes/Potatoes (I suggest not eating the skin til you get 100 percent better though)
Winter Squash (butternut, spaghetti, acorn)
Cooked apples, pears, peaches (skin off)
Rice, pasta, bread
Nut Butters (creamy)
These are all foods that many people find comfortable eating-low insoluble fiber and high soluble fiber content tend to be more comfortable for an injured gut. However, as other people have said, if something bothers you...stop eating. And if something doesn't bother you, go ahead and eat it. I have instances of both for me. Spinach doesn't bother a lot of people while flaring, but if I eat it I'm in immense pain. On the other hand, many people have problems with dairy while I'm kicking back a pint of ice cream and feeling totally fine.
