Biopsies would reveal there are cellular changes from inflammation. If one does have UC from continued inflammation and healing, the changes would show it.
There's not a definitive diagnosis of UC necessarily. If the specialist suspects it (usually after stool samples, blood tests, etc have been done to delete other possibilities) UC is stated at the top of the biopies paper sent to the pathologist. What's requested to be checked would probably be stated there...
So, I'm not convinced one way or the other regarding what you're stating based on the possibility of how you're explaining it or how you understand it.
What I would suggest is that you need to make a list of questions so that you get definitive answers from the new GI. If he says you need no meds...what is that based on? And he should be setting up another appointment sooner than later. As well...to state that if you experience ANY changes to see him immediately...etc.
This is all based on my experience and my perception of others' experiences on here.
