This is mainly about heart disease,but it is of interest since there are many anti-inflammatory compounds in

the moldy cheeses. This stuff needs to be aged,not sure how aged the typical store bought stuff is.

Only in one province (Quebec) which accounts for a mere 20% of the population. (and most of them are bilingual)

I am putting bleu cheese on my grocery list right now! Maybe it's the bacteria that's beneficial. I've never been able to eat too much bleu cheese at a time however, strong stuff.

I eat a lot of cheese and bleu cheese is my favorite. I am eating more of it now since I heard that bleu cheese is an excellent prebiotic for beneficial gut bacteria. But my girlfriend cannot eat it because bleu cheese triggers her migraines.

Try to eat organic dairy or dairy labeled “NO rBGH”. Otherwise try to buy cheese that comes from Europe since Europe bans recombinant bovine growth hormone (rBGH), or artificial growth hormone, in its dairy products.

I should edit my Profile because I've been eating aged cheese for a loong time now haha, no problems. Ice cream? problems.

I love how protective Europe and especially France is of their food products. My dream trip is a month in France, sightseeing and eating :-)

If I eat cheese in excess I get gas. But, cheese naturally contains less lactose than say, milk or dairy cream right?

It should contain less lactose,but believe aged cheese is the key for lower lactose.

Thanks for posting, Old Mike. I agree with Babe that European cheeses can be more gut-friendly due to aging techniques, etc. The Swiss appenzeller, emmentaler, & gruyere sit well for me; they're relatively lowfat, low-salt. / Old Hat (32 yrs with left-sided UC; presently in remission taking brandname Colazal)
