There's one good thing about winter days like this when the temp with the wind chill is below zero......baking a huge pan of root veggies in the oven.

I slather carrots, potatoes (sweet and red), celery, onion and some garlic cloves in olive oil and bake for about 45 minutes in a covered pan, uncovering for an additional 20 min or so.

Can add a little protein if I want to and have many meals for several days. Might also add some to soup.
